EatThis. launches the ‘FoodPrint Experience’

Last night, more than 80 professionals from across the food system gathered at Koppert Cress for the EatThis. Unconference. Around the table were growers, chefs, policymakers, researchers, healthcare professionals, entrepreneurs, and connectors—people who would not normally meet, yet who all have a direct or indirect influence on what ends up on our plates every day.

Quantifying Empathy

True Value and True Cost Pricing have become familiar concepts within horticulture, as the sector has taken the lead in making its impacts and inputs transparent. Horticulture has become increasingly capable of measuring, quantifying, and substantiating where it stands and where it wants to go. But how do you translate those numbers into empathy? How do you ensure that the positive impact you create also receives the societal and political support it deserves? When it comes to food, the answer may be closer than we think. Every person interacts with food every day. By translating the impact of our food choices directly onto the plate, cold statistics become tangible experiences that people can truly feel.

FoodPrint Experience
Designers Stephan Petermann and Marieke van den Heuvel of MISC have created a unique narrative dining experience about our food system. Last night marked the launch of what is hoped to become a long series of FoodPrint Experiences. Coordinated by EatThis., designed by MISC, prepared by the Caring Chefs, and hosted at Koppert Cress, the experience transforms complex food-system challenges into meaningful and memorable encounters.

Stephan Petermann of MISC has a unique ability to translate complex questions surrounding the global food system into edible experiences. Themes such as global food flows, water use, and land use are viewed through an architectural lens and transformed into dishes that participants do not simply consume—they experience. While these topics often remain abstract within reports and statistics, the FoodPrint Experience makes them tangible and emotionally resonant. Each course tells a story and sparks conversation, creating a new way of looking at the choices made throughout the food chain every day. ”Some topics you read about, hear in a podcast, or see on television.
